2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika

½ tsp black pepper
Wet Ingredients:
¾ cup vegetable broth
1 tbsp tomato paste
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp olive oil
½ tsp maple syrup or agave (optional, for a slight balance of sweetness)
Broth for Simmering:
4 cups vegetable broth
1 tbsp tomato paste
2 tbsp soy sauce
1 tsp garlic powder
1 tsp smoked paprika
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the dry ingredients: vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, poultry seasoning, salt, and black pepper.
In a separate bowl, whisk together the wet ingredients: vegetable broth, tomato paste, soy sauce, olive oil, and maple syrup (if using).
Mix and Knead:
Pour the wet mixture into the dry ingredients and stir until a dough forms.

Shape the Dough:

Add the shaped seitan pieces to the broth, ensuring they’re fully submerged. Simmer gently for 40-45 minutes, flipping them halfway through.
Optional Finishing Step:
For more flavor and texture, pan-fry the seitan in a bit of oil until golden and caramelized, bake at 375°F (190°C) for 10-15 minutes, or grill for a smoky finish.
