  1. Prepare Ingredients: Dice 2-3 medium-sized potatoes, mince 2 cloves of garlic, and chop 1 medium onion.
  2. Cook Sausage: In a large skillet, cook 1-2 sausages over medium heat until browned and cooked through, about 5-7 minutes. Remove the sausages from the skillet and set aside. Once cooled, slice the sausages into bite-sized pieces.
  3. Sauté Garlic and Onions: In the same skillet, add a little oil if needed, and sauté the minced garlic and chopped onions until they are soft and fragrant, about 3-4 minutes.
  4. Cook Potatoes: Add the diced potatoes to the skillet with the garlic and onions. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes. If needed, add a little more oil to prevent sticking.
  5. Season: Season the potato mixture with salt and pepper to taste.
